Avocado with Bell Pepper and Tomatoes

Ingredients

  • 1 teaspoon extra-virgin olive oil
  • Juice of 1/2 lime
  • 1 small clove garlic, minced
  • Pinch cayenne
  • Coarse salt
  • 1 ripe avocado, halved and seeded
  • 1/2 yellow bell pepper, stem and seeds removed, diced
  • 6 cherry tomatoes, halved
  • 1 scallion, thinly sliced
  • 1 tablespoon freshly chopped cilantro, plus leaves for garnish

Directions

  1. In a small bowl, whisk together oil, lime juice, garlic, and cayenne. Season with salt.

  2. Scoop out meat from avocado halves and chop. Transfer to a bowl and add bell pepper, tomatoes, scallion, and cilantro.

  3. Drizzle with dressing and season with salt. Gently stir to combine. Spoon mixture into avocado shells. Garnish with cilantro leaves.

    This was the best so far. I used the whole yellow pepper. I also added a mandarin orange. It was so yummy!

    This was by far the favorite meal - great taste, nice portion and left feeling filled and satisfied. The key is to have quality produce - don't skimp on icky tomatoes or iffy avocados. If cilantro isn't your thing (some think it tastes like soap) substitute with parsley. You won't be disappointed.

    Favorite recipe so far, I ate it for dinner the other night after screwing up the beet soup and it was filling enough and fantastic. I had it again for lunch the next day!

    This is probably my favorite lunch recipe of the cleanse so far! It's the perfect light lunch and I adore all of the flavors and textures that harmonize just right. Plus, there's no cooking involved and it's super quick & easy to make. A+!

    I could eat this EVERYDAY! So good. Lemon juice works just as good as the lime juice would.

    My boyfriend and I started this cleansing plan today and I made this salad for our lunch. It was sooooo good I wanted more! We will definately make this again....even when not cleansing! :o)
