Ingredients
2 tablespoons olive oil, plus more for grill
4 bell peppers, halved lengthwise, ribs and seeds removed
4 thick slices whole-wheat country bread
1 tablespoon white balsamic vinegar
2 ounces feta cheese, crumbled (1/2 cup)
1/4 cup fresh basil, torn into pieces
Coarse salt and ground pepper, to taste
Directions
- Grill the bell peppers: Preheat a grill or grill pan over medium heat. Lightly brush the bell peppers with olive oil and season with salt and pepper. Grill, skin-side down, for about 8-10 minutes until the skin is charred and the peppers are tender. Remove from the grill, cool slightly, and slice into strips.
- Grill the bread: Lightly brush the whole-wheat country bread slices with olive oil. Grill for 2-3 minutes on each side until golden brown and crispy. Remove from heat.
- Assemble the bruschetta: In a small bowl, whisk together the olive oil and white balsamic vinegar. Drizzle this mixture over the grilled bread slices.
- Top the bread: Layer the grilled pepper strips on the bread, then sprinkle with crumbled feta cheese. Scatter fresh basil on top.
- Season and serve: Season with a bit of coarse salt and ground pepper. Serve immediately and enjoy the delicious combination of flavors!
