Mint and Parsley Pesto is a fresh and aromatic sauce featuring bright mint, earthy parsley, garlic, nuts, and olive oil for a flavorful twist on classic pesto.
Ingredients
1 cup fresh mint leaves
1/2 cup fresh parsley leaves
1 clove garlic
2 tablespoons pine nuts, toasted
2 tablespoons grated Parmesan
3 tablespoons extra-virgin olive oil
Kosher salt and ground pepper, to taste
6 ounces salmon fillet, skin removed
8 ounces soba noodles
1 1/2 cups watercress
Directions
Cook the soba noodles: Bring a large pot of salted water to a boil and cook the soba noodles according to package instructions. Drain and set aside.
Prepare the herb pesto: In a food processor, combine the mint leaves, parsley leaves, garlic, toasted pine nuts, and grated Parmesan. Pulse until finely chopped. With the motor running, slowly drizzle in the olive oil and blend until smooth. Season with salt and pepper to taste.
