Avocado Gelato is a rich and creamy frozen treat featuring the smooth texture of ripe avocados with a subtly sweet and refreshing flavor.

Ingredients

  • 1/2 cup whole milk

  • 2 tablespoons cornstarch

  • 1 1/2 cups fat-free milk

  • 1/2 cup sugar

  • 4 strips orange zest

  • 2 ripe Hass avocados, halved, pitted, and peeled

  • 2 tablespoons fresh lime juice, plus wedges for serving

  • 1/4 teaspoon coarse salt

Directions

  • Prepare the milk mixture: In a small bowl, whisk together 1/2 cup whole milk and cornstarch until smooth. Set aside.
  • Heat the milk: In a saucepan, combine the fat-free milk, sugar, and orange zest over medium heat. Stir occasionally and bring the mixture to a simmer.
  • Thicken the base: Remove the orange zest and gradually whisk in the cornstarch mixture. Cook for another 2-3 minutes until the mixture thickens.
  • Prepare the avocado blend: In a blender or food processor, combine the ripe avocados, lime juice, and salt. Blend until smooth.
  • Mix and chill: Gradually pour the thickened milk mixture into the avocado blend and continue blending until creamy. Transfer the mixture to a container, cover, and refrigerate for at least 4 hours or until fully chilled.
  • Churn and freeze: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions. Once churned, transfer to a container and freeze for at least 2 hours before serving.
  • Serve: Scoop the avocado gelato into bowls, garnish with lime wedges, and enjoy!
