Ingredients

  • 2 teaspoons olive oil

  • 1 pound (about 2 or 3) green zucchini, cut into 1/2-inch pieces

  • 4 scallions, thinly sliced

  • 4 cloves garlic, minced

  • 1 teaspoon dried marjoram

  • 1 teaspoon coarse salt

  • 1/2 teaspoon freshly ground pepper

  • 1 pound (about 2 or 3) yellow zucchini, cut into 1/2-inch pieces

  • 1/2 cup freshly chopped dill

  • 1/4 cup freshly chopped flat-leaf parsley

  • 5 large eggs plus 5 large egg whites, lightly beaten

  • 1 tomato, thinly sliced

  • 2 ounces low-fat feta cheese, crumbled

Directions

  • Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly grease a pie dish or baking dish with olive oil.
  • Cook the Zucchini: Heat the olive oil in a large skillet over medium heat. Add the green and yellow zucchini, scallions, garlic, dried marjoram, salt, and pepper. Cook, stirring occasionally, for about 5-7 minutes until the zucchini softens.
  • Combine the Filling: In a large mixing bowl, combine the cooked zucchini mixture with the freshly chopped dill and parsley. Stir in the lightly beaten eggs and egg whites until everything is well mixed.
  • Assemble the Pie: Pour the zucchini and egg mixture into the prepared pie dish. Arrange the thinly sliced tomato on top of the mixture, and sprinkle with crumbled feta cheese.
  • Bake: Bake the zucchini pie in the preheated oven for 30-35 minutes, or until the eggs are set and the top is golden brown.
