  • 1/2 small sugar pumpkin

  • 4 tablespoons extra-virgin olive oil, plus more for drizzling

  • Kosher salt and freshly ground pepper, to taste

  • 2 tablespoons honey

  • 1/2 pound whole-grain pasta

  • 2 teaspoons minced garlic

  • 2 minced anchovies (optional)

  • 1/2 cup finely chopped toasted walnuts

  • 1/4 cup chopped parsley

  • 1/2 cup finely grated Parmesan cheese

Directions

  • Prepare the Pumpkin: Preheat your oven to 400°F (200°C). Cut the sugar pumpkin in half and remove the seeds. Drizzle with olive oil, season with salt and pepper, and place cut-side down on a baking sheet. Roast for about 30-35 minutes, or until tender. Once cooked, scoop out the flesh and mash it into a smooth puree.
  • Cook the Pasta: While the pumpkin is roasting, bring a large pot of salted water to a boil. Add the whole-grain pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.
  • Make the Sauce: In a large skillet, heat the remaining olive oil over medium heat. Add the minced garlic and optional anchovies, cooking for 1-2 minutes until fragrant. Stir in the pumpkin puree, honey, and reserved pasta water until well combined. Season with salt and pepper to taste.
  • Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing to coat in the pumpkin sauce. Stir in the toasted walnuts and chopped parsley.
