1 onion, chopped
1 stalk celery, thinly sliced
1 carrot, peeled and thinly sliced
2 pounds Yukon Gold potatoes, peeled and cut into 1-inch chunks

2 cups cooked white beans, drained (equivalent to one 16-ounce can)
Coarse salt and freshly ground pepper, to taste
Directions
- In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion, celery, and carrot, and cook until the vegetables are softened, about 5 minutes.
- Add the diced Yukon Gold potatoes and enough water to cover the vegetables by about an inch. Bring to a boil, then reduce the heat and simmer until the potatoes are fork-tender, about 15-20 minutes.
- Drain the potatoes and vegetables, then return them to the pot. Add the drained white beans and mash everything together until smooth and creamy.
- Season with coarse salt and freshly ground pepper, adjusting to taste.
- Drizzle with a little extra-virgin olive oil before serving for an extra burst of flavor.
