Sweet Potato, Celery, and Apple Salad

Ingredients

  • 2 tablespoon lemon juice
  • 1 tablespoon freshly grated ginger
  • 2 tablespoon extra-virgin olive oil
  • Coarse salt and freshly ground pepper
  • 1 small sweet potato, peeled and finely julienned (2 cups)
  • 1 tart apple, cored and finely julienned
  • 1 stalk celery, thinly sliced
  • 2 scallions, thinly sliced
  • 3 radishes, finely julienned
  • 3 tablespoon toasted sesame seeds
  • 1/4 cup packed fresh cilantro leaves

Directions

  1. In a small bowl, whisk lemon juice, ginger, and oil. Season with salt and pepper.

  2. In another bowl, combine sweet potato, apple, celery, scallions, radishes, sesame seeds, and cilantro.

  3. Drizzle dressing over salad and season with salt and pepper.

    I'm loving this whole set of recipes, but I don't think you are supposed to make a habit of eating sweet potato raw.

    I have the unfair advantage of not liking many fruits and vegetables. Part of my reason for doing this cleanse was to become more familiar with different things. That being said, this was okay, but not great. I think I will try to tweek the recipe next time, I found it to be too tart. Not bad overall though.

    This salad is so pretty and tastes so good. It's really yummy paired with the Spiced Butternut Squash soup as a light lunch. I just run everything through the shredder disc in my food processor and it always turns out great! More like a slaw than a salad but so delicious! Would be great paired with turkey burgers right off the grill during summer.

    Agreed!! This salad was really really nice!
    I was also very surprised to add raw sweet potatoes to this dish but it is indeed very good!
    Every bite brings a new flavor too. Once you'll get the sesame taste, then the sweet potato, then the cilantro and so on.
    So refreshing and surprising! I will definitely have it again!!
    Would be perfect as a light summer salad. Easy for a lunch at work too.

    I can't even begin to tell you how good this salad is! It's good the first day as well as the next day after. I omitted the celery because I can't stand it but I was surprised how good raw sweet potato and radishes are! Highly recommend during and after the cleanse!

    This salad is delicious! It's tangy, sweet, crunchy and fresh. I prepared it last night, so it marinated overnight. I also omitted the radishes because I can't stomach them.

    I will definitely make this salad even after the detox is over.
