Ingredients

  • 1 tablespoon extra-virgin olive oil

  • 1 medium onion, diced

  • 3 cloves garlic, chopped

  • 1/4 cup chopped fresh cilantro stems, plus 1/4 cup chopped cilantro leaves

  • 1 teaspoon ground coriander

  • 5 medium yellow summer squash (2 1/2 pounds), chopped

  • Coarse salt, to taste

  • Lime wedges, for serving

Directions

  • Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 5-7 minutes until softened. Add the garlic and cilantro stems, cooking for another 1-2 minutes until fragrant.
  • Add the Squash and Spices: Stir in the ground coriander and chopped summer squash. Season with coarse salt and cook for 5 minutes, stirring occasionally, allowing the squash to soften slightly.
  • Simmer the Soup: Add enough water to cover the vegetables, bring to a boil, then reduce the heat and simmer for 15-20 minutes, until the squash is tender.
  • Blend Until Smooth: Remove from heat and use an immersion blender to purée the soup until smooth and creamy. Alternatively, transfer the soup to a blender and purée in batches.
  • Garnish and Serve: Ladle the soup into bowls and top with fresh cilantro leaves. Serve with lime wedges on the side for a bright, tangy finish.
