Cherry-Date Oat Bars are a chewy and naturally sweet treat featuring tart cherries, rich dates, and hearty oats for a wholesome snack.

Ingredients

  • Coconut or extra-virgin olive oil (for greasing)

  • 3 cups gluten-free rolled oats

  • 1/2 cup unsweetened dried cherries

  • 1/2 cup unsweetened dried dates, chopped

  • 2 tsp ground cinnamon

  • 1 tsp coarse salt

  • 1/2 cup smooth natural almond butter (at room temperature)

  • 4 Tbsp ground flaxmeal

  • 1/2 cup unsweetened applesauce

  • 1/2 cup honey

  • 3 Tbsp orange juice

  • 1/4 tsp vanilla extract

Directions

  • Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan with coconut or extra-virgin olive oil.
  • In a large mixing bowl, combine the rolled oats, dried cherries, dried dates, ground cinnamon, and coarse salt. Stir well.
  • In a separate bowl, whisk together the almond butter, ground flaxmeal, applesauce, honey, orange juice, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry ingredients and stir until fully combined.
  • Spread the mixture evenly in the prepared baking pan and press it down firmly.
  • Bake for 25-30 minutes, or until the edges are golden brown.
  • Let the bars cool completely before cutting them into squares.
