Ingredients

  • 1 cup all-purpose flour, spooned and leveled

  • 1/3 cup unsweetened cocoa powder

  • 1 1/2 teaspoons baking powder

  • 1/4 teaspoon salt

  • 1 large egg, plus 1 large egg yolk

  • 1/2 cup sugar

  • 1 teaspoon vanilla extract

  • 1/4 cup canola oil

  • 1/2 cup walnuts, coarsely chopped

  • 3 ounces dark chocolate, coarsely chopped (1/2 cup)

  • 1/4 cup finely chopped crystallized ginger

Directions

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and lightly grease.
  • In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  • In another bowl, whisk the egg, egg yolk, sugar, vanilla, and oil until smooth. Gradually stir in the dry mixture.
  • Fold in the walnuts, dark chocolate, and crystallized ginger until evenly combined.
  • Form the dough into a 12-inch log on the baking sheet and flatten slightly.
  • Bake for 25-30 minutes or until firm. Let it cool for 10 minutes.
  • Slice the log into 1/2-inch thick biscotti and bake for another 10-12 minutes until crisp.
  • Let the biscotti cool completely before serving.
