  • 1/4 teaspoon coarse salt

  • 1 cup rolled oats

  • 1/4 cup all-purpose flour

  • 1/4 cup unsalted butter (1/2 stick), melted

  • 1/4 cup brown sugar

  • 1/8 teaspoon coarse salt

  • For the garnish:
  • Fresh basil leaves, torn if large

Directions

  • Prepare the fruit filling: In a large mixing bowl, combine the hulled strawberries, rhubarb, granulated sugar, cornstarch, and coarse salt. Toss gently to coat the fruit evenly. Set aside while you prepare the topping.
  • Make the topping: In another bowl, mix the rolled oats, all-purpose flour, brown sugar, and coarse salt. Pour the melted butter over the mixture and stir until combined. The topping should be crumbly and slightly sticky.
  • Assemble the crisp: Preheat your oven to 375°F (190°C). Transfer the fruit mixture to an 8x8-inch baking dish or similar size. Sprinkle the oat topping evenly over the fruit.
  • Bake: Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the fruit is bubbling. Remove from the oven and let it cool slightly before serving.
