  • FOR THE DRESSING
  • 1/3 cup cider vinegar

  • 1/4 cup honey

  • 2 tablespoons spicy stone-ground mustard, preferably Creole (zatarains.com), or spicy brown mustard

  • 1 large jalapeno chile, stem, ribs, and seeds removed, minced (3 tablespoons)

  • 2 teaspoons coarse salt

  • 1/4 teaspoon freshly ground pepper

  • 3 tablespoons extra-virgin olive oil

Directions

  • Prepare the slaw: In a large bowl, combine the thinly sliced napa cabbage, shredded carrots, cubed apple, and golden raisins. Toss gently to mix the ingredients evenly.
  • Make the dressing: In a small bowl, whisk together the cider vinegar, honey, spicy mustard, minced jalapeno, salt, and pepper. Gradually whisk in the extra-virgin olive oil until the dressing is smooth and well combined.
  • Combine: Pour the dressing over the slaw mixture and toss well to coat all the vegetables and fruits evenly. Let the coleslaw sit for about 10 minutes to allow the flavors to meld.
