Ingredients

  • 4 cups chicken stock

  • 1/2 yellow onion, diced

  • 1 minced garlic clove

  • 1 large sweet potato, peeled and diced (2 cups)

  • 8 ounces boneless, skinless chicken breast, cut into 1-inch pieces

  • 1/2 cup smooth almond butter

  • 1 cup collard leaves, coarsely chopped

  • 2 tablespoons minced fresh ginger

  • Coarse salt and freshly ground black pepper, to taste

  • 1 lime, cut into wedges

Directions

  • Sauté the Aromatics:
  • In a large pot, heat a splash of oil over medium heat. Add the diced onion and garlic, and cook for 3-5 minutes until softened and fragrant.
  • Add Sweet Potato and Chicken:
  • Stir in the diced sweet potato and chicken pieces. Cook for 5 minutes, stirring occasionally, until the chicken is browned.
  • Simmer the Soup:
  • Pour in the chicken stock and bring to a boil. Reduce the heat and let it simmer for 15 minutes, or until the sweet potatoes are tender.
  • Stir in Almond Butter and Greens:
  • Stir in the almond butter and minced ginger until well combined. Add the chopped collard greens and cook for another 5 minutes until the greens are wilted and the soup is creamy.
  • Season and Serve:
  • Season with salt and pepper to taste. Serve hot, with lime wedges on the side for a refreshing citrus kick.
