- 1/4 cup natural, unblanched almonds
- 3 tablespoons extra-virgin olive oil
- 1 small onion (about 2 ounces) or 1 shallot, thinly sliced into rounds
- 1 pound assorted young leafy summer greens, well washed and dried
- Coarse salt and ground pepper
- 1 garlic clove, minced to a paste
- 8 slices rustic bread, 1/2-inch thick and 4 inches across, toasted
- 2 ounces firm goat cheese, cut into 8 slices
- 2 teaspoons sherry vinegar
