A refreshing and naturally sweet sorbet made with ripe papaya for a tropical frozen treat.

Ingredients

  • 1/3 cup sugar

  • 3 pounds fresh red papayas (about 1 1/2 medium), peeled, halved, seeded, and chopped

  • 1/2 cup fresh lime juice (from 3 to 4 limes)

  • 1 tablespoon honey

  • Thinly sliced lime rounds for garnish

Directions

  • Prepare the Papayas: Peel, halve, seed, and chop the papayas into small pieces.
  • Blend the Ingredients: In a blender or food processor, combine the chopped papayas, fresh lime juice, sugar, and honey. Blend until the mixture is completely smooth.
  • Chill the Mixture: Pour the mixture into a bowl and refrigerate for about 1 hour, allowing the flavors to meld and the mixture to chill.
  • Churn the Sorbet: After chilling, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions (typically about 20-25 minutes) until the sorbet has a smooth and creamy texture.
  • Freeze and Serve: Transfer the churned sorbet into a freezer-safe container and freeze for at least 2 hours to firm up. Serve garnished with thinly sliced lime rounds.
