Ingredients

  • 2 tablespoons olive oil

  • 1 onion, chopped

  • 2 garlic cloves, chopped

  • 1 inch fresh ginger, grated (2 tablespoons)

  • 1/2 teaspoon turmeric

  • 1/8 teaspoon cinnamon

  • 1/8 teaspoon cardamom

  • Dash ground cloves

  • 2 carrots, peeled and chopped

  • 1 tart apple, peeled, quartered, and chopped

  • 4 cups chopped butternut squash

  • Coarse salt and pepper to taste

  • 4 cups vegetable broth

Directions

  • Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, sautéing until softened, about 3-4 minutes.
  • Stir in the grated ginger, turmeric, cinnamon, cardamom, and a dash of ground cloves. Cook for another 1-2 minutes, stirring frequently to release the spices' aroma.
  • Add the chopped carrots, apple, and butternut squash to the pot. Season with salt and pepper to taste.
  • Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to a simmer and cook for 20-25 minutes, until the vegetables are tender.
  • Using an immersion blender, puree the soup until smooth. Alternatively, transfer it in batches to a blender and puree until smooth.
  • Adjust seasoning if needed, and serve warm. Garnish with fresh herbs or a drizzle of olive oil, if desired.
