A Herbed Ricotta Soufflé is a light, fluffy dish made with ricotta cheese and fresh herbs, baked to golden perfection for a creamy, savory treat.

Ingredients

  • Unsalted butter, for greasing the dish

  • All-purpose flour, for dusting the dish

  • 1 1/2 cups part-skim ricotta

  • 4 large eggs, separated

  • 1/2 teaspoon coarse salt

  • 2 tablespoons freshly chopped basil

  • 2 tablespoons freshly minced chives

  • Ground black pepper, to taste

Directions

  • Prepare the dish: Preheat the oven to 375°F (190°C). Butter a 1-quart soufflé dish or individual ramekins, then dust lightly with flour, tapping out the excess.
  • Make the ricotta mixture: In a large bowl, combine the ricotta, egg yolks, coarse salt, basil, chives, and a pinch of black pepper. Mix until smooth and set aside.
  • Whip the egg whites: In a separate bowl, beat the egg whites with an electric mixer until stiff peaks form.
  • Fold in the egg whites: Gently fold the whipped egg whites into the ricotta mixture, being careful not to deflate the air in the egg whites. Fold until just combined.
  • Bake the soufflé: Pour the mixture into the prepared soufflé dish and smooth the top. Bake for 25-30 minutes, or until the soufflé is puffed up and golden brown on top. The soufflé should have a slight jiggle in the center.
  • Serve immediately: Once done, remove from the oven and serve the Herbed Ricotta Soufflé immediately for the best texture.
