Buttery, caramelized pastries with a crisp, flaky exterior and a rich, sweet interior, originating from Brittany, France.

Ingredients

  • 1/2 teaspoons active dry yeast

  • 1 cup warm water (110°F)

  • 3 cups all-purpose flour

  • 1 teaspoon salt

  • 10 tablespoons unsalted butter, softened

  • 1 1/4 cups sugar

  • Extra flour for rolling

Directions

  • Prepare the dough: In a small bowl, dissolve the yeast in warm water and let it sit for 5 minutes until foamy. In a large bowl, combine the flour and salt. Add the yeast mixture and stir until a dough forms. Knead the dough on a lightly floured surface for about 5 minutes until smooth and elastic. Place the dough in an oiled bowl, cover, and let rise in a warm place for about 1 hour or until doubled in size.
  • Roll and fold the dough: Punch down the dough and roll it into a 12x12-inch square. Spread softened butter evenly over the surface of the dough, then sprinkle with 1/2 cup of sugar. Fold the dough into thirds like a letter, then fold again into thirds to form a square. Roll out the dough again into a 12x12-inch square and sprinkle with another 1/2 cup of sugar. Fold the dough into thirds again and refrigerate for 30 minutes.
  • Shape the pastries: Preheat the oven to 400°F (200°C). Roll the dough out into a square once more and cut it into 12 equal squares. Grease a muffin tin and gently press each square of dough into the cups, folding the corners into the center. Sprinkle with the remaining sugar.
  • Bake: Bake the pastries for 25-30 minutes until golden brown and caramelized. Allow them to cool slightly before transferring to a wire rack.
  • Serve: Enjoy your Kouign Amann Pastries warm or at room temperature, preferably with a hot cup of coffee or tea.
