Ingredients

  • 3/4 cup black rice

  • 1 1/2 cups water

  • 1 bunch spinach, large stems removed and rinsed

  • 3 tablespoons vegetable oil

  • 2 cloves garlic, minced

  • 3 tablespoons finely chopped fresh ginger

  • 3 scallions, thinly sliced, white and green parts separated

  • 1 pound extra-firm tofu, cut into six 1/2-inch-thick rectangles

  • 1 tablespoon Sriracha sauce

  • Lime wedges, for serving

Directions

  • Cook the Black Rice: In a medium saucepan, bring 1 1/2 cups of water to a boil. Add the black rice, reduce heat to low, cover, and simmer for about 30-35 minutes, or until the water is absorbed and the rice is tender. Set aside and fluff with a fork.
  • Prepare the Spinach: In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the spinach and cook, stirring occasionally, until wilted (about 2-3 minutes). Remove from heat and set aside.
  • Cook the Tofu: In the same skillet, add another tablespoon of oil. Pat the tofu dry with a paper towel, then add it to the skillet. Cook for about 3-4 minutes on each side, until golden brown and crispy. Remove tofu from the skillet and set aside.
  • Stir-fry the Aromatics: In the same skillet, add the remaining tablespoon of vegetable oil, minced garlic, ginger, and the white parts of the scallions. Cook for 1-2 minutes until fragrant.
  • Combine and Serve: Add the cooked black rice and spinach back to the skillet, tossing everything together to combine. Drizzle with Sriracha sauce and stir. Place the crispy tofu on top of the rice mixture and garnish with the green parts of the scallions. Serve with lime wedges for an extra burst of flavor.
