  • 3/4 teaspoon whole cumin seeds

  • 1 1/2 teaspoons whole mustard seeds

  • 1 large onion, thinly sliced (about 3 cups)

  • 1/4 cup finely shredded peeled ginger

  • 5 cloves garlic, very thinly sliced

  • 1 1/2 teaspoons kosher salt

  • 1 medium head cauliflower (about 2 pounds), cut into large florets

  • 3/4 cup water

  • 1 cup cooked chickpeas

  • 1-2 small red chiles, thinly sliced, seeds removed for less heat

Directions

  • Heat the oil: In a large skillet, heat the grapeseed oil over medium heat. Add the cumin and mustard seeds, and cook until they begin to pop, about 1-2 minutes.
  • Sauté the aromatics: Add the sliced onions, ginger, and garlic to the skillet. Cook, stirring frequently, until the onions soften and turn golden brown, about 8-10 minutes.
  • Add the cauliflower: Stir in the cauliflower florets and salt. Sauté for 3-4 minutes until the cauliflower starts to lightly brown.
  • Simmer: Add the water, reduce the heat to low, and cover the skillet. Let the cauliflower steam for about 10 minutes until it's tender but still firm.
  • Finish the dish: Stir in the cooked chickpeas and sliced red chiles. Cook for an additional 2-3 minutes to allow the flavors to combine. Adjust the seasoning as needed.
  • Serve: Transfer to a serving dish and enjoy hot with your favorite side dishes.
