Ingredients

  • 1/2 red onion, thinly sliced

  • 1 or 2 serrano chiles, seeded for less heat, if desired, and very thinly sliced

  • 1 small garlic clove, minced

  • 1/2 cup freshly squeezed orange juice (about 2 oranges)

  • 1 tablespoon freshly squeezed lime juice (about 1 lime)

  • 1 pineapple, peeled and chopped into 1/2-inch pieces

  • 1 1/2 teaspoons extra-virgin olive oil

  • 1 cup loosely packed fresh mint leaves

Directions

  • Mix the citrus and seasonings: In a large bowl, combine the freshly squeezed orange juice, lime juice, thinly sliced red onion, serrano chiles, and minced garlic. Let it sit for 5 minutes to allow the flavors to blend.
  • Add the pineapple: Stir in the chopped pineapple, making sure to coat all the pieces with the citrus mixture.
