Beat all ingredients until combined, about 2 minutes. Let rest at room temperature for 2 hour.
Preheat oven to 325 degrees. Roll 1 tablespoon of dough into a crescent shape. Place on a baking sheet. Repeat. Bake until light golden brown, 25 to 30 minutes. Cool on trays for 10 minutes. Roll in vanilla sugar.
To make vanilla sugar, split two vanilla beans and place in an airtight container with 2 cups sugar. Let stand overnight and up to 3 months.

Has anyone tried to make these using Earth Balance? I am allergic to all dairy (butter, cheese, milk, etc) so that is what I have to use. These sound so yummy! I will make them and be the guinea pig

I use Dr. Oetker vanilla sugar mixed with icing sugar, and have done this for 50 years now. Roll cookies while still hot.
Sorry, no you can't use Splenda. It doesn't have the same texture as sugar. It is a little too coarse and it doesn't pick-up the vanilla flavor as well as sugar. I know this because I tried to use Splenda for something and it was a disaster. It look awful and tasted about as bad. From then on I've stuck to the real stuff. These cookies are very good, especially with a cup of hot tea or coffee.

8 tbls is a 1/2 a cup and a 2 tbls is 1/8 cup you're better off cutting the stick where they indicate the measurements
