Kale Slaw with Red Cabbage and Carrots

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple-cider vinegar
  • Coarse salt and pepper
  • 3 cups mixed shredded kale and red cabbage
  • 1 carrot, peeled and julienned
  • 1/4 cup fresh parsley leaves
  • 2 tablespoons diced red onion
  • 2 tablespoons sunflower seeds
  • 2 tablespoons pumpkin seeds
  • 2 tablespoons hemp seeds

Directions

  1. In a small bowl, whisk olive oil, mustard, and apple-cider vinegar. Season with salt and pepper.

  2. In another bowl, combine kale, cabbage, carrot, parsley, and red onion with sunflower, pumpkin, and hemp seeds.

  3. Season with salt and pepper, drizzle with dressing, and toss to coat.

    I loved this recipe! Like another reviewer, I used walnuts instead of hemp seeds. Both are a good source of Omega-3 fatty acids. I also added cayenne and smoked paprika to the dressing. Will try to lemon juice on it next time, that sounds great! I used whole seed mustard and thought it went well with the other flavors. I made the recipe a second time and added raisins; I think it'd be good with apples as well.

    The raw kale was a bit too "hearty" for me. I will not make this again but will continue with kale chip snacks to gain the benefits.

    LOVED THIS! I really enjoyed all the tasted in this salad. I'm not sure that I agree with the serving size. I could have eaten the whole thing. One thing I am beginning to notice is that I hate parsley, maybe next time I will use cilantro, but I would definitely make this again!

    I had my doubts with this detox but I love the recipes. This one is very good and filling. I too had to use butternut squash but still enjoyed the combination of warm veggies on a crisp salad. The tahini dressing is a bit thin but has great flavor.

    I really do not like mustard...detest it actually. Will it be ok with just the vinegar and oil? Maybe a little lemon juice? I always get frustrated when I see recipes that look so yummy but then call for some kind of prepared mustard.

    This was sooo good during lunch. I used honey mustard instead and doubled the recipe on the dressing. Had no nuts so went w/o still very good.

    I couldn't find hemp seeds so I threw in some walnuts. I also squeezed fresh lemon juice (about 1/2 a lemon) into the dressing. Very tasty, and it smells divine!

    1 tablespoon of Dijon mustard? That just can't be right. I upped the amount of apple cider vinegar and added some (boiled down) orange juice.

    This is one hearty salad. I didn't really shred the kale, but ripped it into smaller pieces. The flavors go wonderfully together, and don't skip the dressing. Hemp seeds are pretty easy to find at the local health food store or Whole Foods.

    This salad was great and I used white pepper instead of black for a slight flavor change. I have to say hemp seeds were a pain to track down and incredibly expensive. The grocery store ran out with my small purchase (literally 2 tbsp.). I think on the next go-round of making it I'll put the kale and cabbage in the food processor for less mess.
