Chewy and satisfying bars made with rich chocolate, sweet apricots, and a mix of crunchy nuts, creating a deliciously balanced snack.

Ingredients

  • 1 1/2 cups dried apricots

  • 1/2 cup raw almonds, toasted

  • 2 tablespoons unsweetened shredded coconut, toasted

  • A pinch of coarse salt

  • 1/2 ounce dark chocolate, melted

Directions

  • In a food processor, combine the dried apricots, toasted almonds, and toasted shredded coconut. Pulse until the mixture is finely chopped and begins to stick together.
  • Transfer the mixture to a lined 8x8-inch baking dish, pressing it firmly into an even layer.
  • Drizzle the melted dark chocolate over the top and sprinkle a pinch of coarse salt for added flavor.
  • Refrigerate the bars for at least 1 hour or until set.
  • Once firm, cut into 8 bars and serve. Store in an airtight container in the fridge for up to a week.
