4 sheets nori (seaweed)
1 cup cooked sushi rice or brown rice
1/2 cucumber, thinly sliced into matchsticks
1/2 carrot, julienned
1/2 avocado, sliced
1/4 cup shredded cabbage
1 tablespoon pickled ginger (optional)
Soy sauce or tamari for dipping
Directions
For the Cold Tofu Salad:
In a large bowl, combine the cubed tofu, soy sauce, sesame oil, and rice vinegar. Toss gently to coat the tofu in the dressing.
