A rich and creamy dip blending tender artichokes with flavorful spinach for a deliciously savory appetizer.
Ingredients
5 artichokes, tough outer leaves removed, stems and tops of leaves trimmed
5 lemons
2 cups tightly packed baby spinach
2 tablespoons mayonnaise
1 tablespoon finely chopped shallot
1 garlic clove, finely chopped
3/4 cup part-skim ricotta cheese
1/4 teaspoon coarse salt
1/8 teaspoon cayenne pepper
Freshly ground pepper
1/3 cup plus 2 tablespoons shredded part-skim mozzarella
1 tablespoon shredded Parmesan cheese
1 whole-wheat baguette (9 ounces), cut on the diagonal into 1/4-inch-thick slices and toasted
Directions
Bring a large pot of water to a boil. Squeeze the juice of 4 lemons into the water and add the trimmed artichokes. Boil for 25-30 minutes or until the artichokes are tender. Drain and allow to cool slightly.
Preheat the oven to 375°F (190°C).
Meanwhile, in a large skillet, sauté the spinach over medium heat until wilted, then set aside.
In a mixing bowl, combine the mayonnaise, shallot, garlic, ricotta cheese, salt, cayenne pepper, and a dash of freshly ground pepper. Stir in the spinach and chopped artichokes.
Transfer the mixture to an ovenproof dish, and sprinkle with mozzarella and Parmesan cheese on top.
Bake for 20-25 minutes, or until the top is golden and bubbly.
Toast the whole-wheat baguette slices in the oven or on a grill, then serve alongside the warm dip.
