A vibrant and zesty dressing made with fresh carrots, ginger, and a tangy citrus blend.

Ingredients

  • 2 medium peeled and grated carrots

  • 1 small shallot, chopped

  • One 2-inch piece fresh ginger, peeled and chopped

  • 2 tablespoons miso (preferably white or yellow)

  • 2 tablespoons rice vinegar

  • 1/4 cup water

  • 1/4 cup vegetable oil

  • Coarse salt, to taste

Directions

  • Prepare the ingredients: In a blender or food processor, combine the grated carrots, chopped shallot, fresh ginger, miso, rice vinegar, and water.
  • Blend the dressing: Blend on high speed until the mixture is smooth. With the motor running, slowly drizzle in the vegetable oil until the dressing is emulsified and creamy.
  • Season and adjust: Taste the dressing and season with coarse salt as needed. If the consistency is too thick, you can add a little more water to thin it out to your desired texture.
